The Kagi
There is no drinks list at Himitsu. There is a box.
The Kagi is a wooden box built like a cryptex — four rings, six faces each, between two black caps. Its rings turn, and where you stop them composes a drink: not chosen from a page, but assembled in your hands at the counter.
One thousand two hundred and ninety-six combinations are possible. Almost every one of them has never been made before, and most will never be made again.
The bartender builds what you land on. That is the whole exchange: you turn the rings, the bar answers.

Turn it yourself
Four rings, six faces each. Stop them where you like and you have one of 1,296. One of the six bases is 0% — a guest who does not drink turns the same box and has the same 1,296 in front of them.

The signature drink
Red Jacket
A jacket hangs on the wall of the bar. Order the drink named after it and you may put it on.
Iconic drinks carry more than a recipe. A person, an era, a place. From the Bellini to the French 75, the classics we still order captured a moment and kept it.
Red Jacket was created here by Bishnu Gauchan — not as a twist on something that already exists, but on its own foundation, built with ritual, storytelling and lacto-fermentation.
It became the signature because guests decided it had. They asked for it by name, brought people to try it, made it theirs. That is the part an operator cannot manufacture.
The jacket itself is on the wall. It fits most people rather well.
