A hidden Japanese speakeasy, cocktail bar and omakase counter inside Alba at Dubai Opera Plaza, Downtown Dubai.

Fifteen seats, behind a wall, inside Alba.

There is no street entrance and no sign. You come in through the restaurant, give your name, and are walked to a door most guests never notice. Behind it: a red curtain, a short dark corridor, and a room of fifteen seats. Reservation only — there are no walk-ins, because there is nowhere to stand.

The counter

Omakase

Himitsu also runs an omakase at the counter — a set sequence of courses you do not choose, served to eight seats in Downtown Dubai, with the drinks composed against the food rather than ordered alongside it.

There is no drinks list at Himitsu. There is a box.

A wooden box built like a cryptex. Its rings turn, and where you stop them composes a drink — 1,296 of them are possible, and most will never be made twice.

The signature drink

A jacket hangs on the wall of the bar. Order the drink named after it and you may put it on.

Created here by Bishnu Gauchan. It became the signature because guests decided it had — they asked for it by name and brought people to try it.

Wednesday – Saturday, from 7pm till 1am. The counter seats at 6pm and 8pm. Seatings are released through the booking system, which is always the current word on what is open — for a private table, a buy-out or a partnership, the events form reaches us directly.
